Be Stitched Baking {Rosemary Roasted Potatoes}

The Husband loves to eat some French fries.  I, on the other hand, try to avoid fried foods.  He loves white potatoes; I try to avoid white potatoes.  Enter:  Rosemary Roasted Potatoes.  He gets his ‘fry fix’, and I serve up a healthy side.

{Rosemary Roasted Potatoes}

3-5  small new (red) potatoes and/or 1 large sweet potato

1-2 T  olive oil

2 T fresh chopped rosemary

Sea salt

Preheat oven to 400 degrees.  Dice up your preferred potato.  Toss in olive oil, rosemary, and sea salt.

Line a cookie sheet with parchment paper and spread out the potatoes evenly.

Bake for 35-40 minutes, stirring every 15 minutes.  For an additional 5 or 10 minutes, I like to turn on the broiler so that they get nice and crispy (and burnt).   This adds excellent flavor but also makes these potatoes more like French fries.

  1. I love this! This is very similar to something we do quite often. For new potatoes we will use olive oil, balsamic vinegar, salt and pepper. For sweet potatoes adding sweet paprika is delicious as well.
