15 Minute Meal {Hot Orzo with Lemon, Zucchini, and Tomato}

It’s cold outside, and I am tired of soup.  Enter:  Hot Orzo!

This could be one of my easiest creations to date.  Boil up some orzo, toss in a few veggies, and you have a yummy vegetarian dinner to serve.

{Hot Orzo with Lemon, Zucchini, and Tomato}

1 cup dry organic whole wheat orzo 

4 c water

1/2 c chopped fresh parsley

15 tiny cherry tomatoes, halved

1 zucchini, chopped

1 lemon

1 T olive oil

garlic salt

sea salt


Bring the water to a boil, and cook the orzo according to package directions (8-10 minutes). Meanwhile, chop the zucchini and slice tomatoes in half.  In a small skillet, saute the zucchini for 5-6 minutes until heated through.  Season with garlic salt, if desired.

Drain the orzo when it is cooked to al dente.  Add in cooked zucchini, tomatoes, parsley, olive oil, a touch of sea salt, and the juice of one small lemon.  Toss, add lemon zest, and serve immediately.
