Where’s the Meat? {Vegan Black Bean Quinoa ‘Burgers’}

It has been a while since I have posted a recipe!  Since the year started, I have been talking all about the 30 for 30 Challenge I completed and my NEW and fabulous domain name.

Anyway, I am back to posting recipes and ready for new ideas in 2013!  Here we go…

Black bean quinoa 'burgers' 1

Don’t let the word ‘burger’ fool you.  The consistency of this dish is nothing like ‘ground meat’. It is actually not quite anything I have had before, but that is pretty much what this blog is all about…trying new things!

I am not sure that I would eat this on a bun or bread like you would a traditional meat burger, but with the right toppings, I think it could work.  You may need to add some bread crumbs to stiffen it up.   And you can easily change up the seasonings to what you prefer.  The black beans and quinoa take on the flavors of whatever you add to them.


{Vegan Black Bean Quinoa ‘Burgers’}

1 can smashed black beans

1-2 T minced onion

2 cloves garlic, minced

1 T fresh rosemary, finely chopped

3/4 c cooked quinoa

1 c fresh spinach, finely chopped

1 T olive oil


In a small bowl, stir all ingredients until well combined.

Add 1/2 T olive oil to a large pan on high heat.  Make ‘burgers’ out of the mixture, and saute on both sides until heated throughout and crispy on the outside.  Repeat with the rest of the oil and bean mixture until you have used it all up.  Serve immediately.
