Vegan Pizza!!

{Vegan Roasted Veggie Pizza}

1 corn meal crust (I used this organic crust from Vicolo.)

1 c diced fresh broccoli

1/3 of a red bell pepper, chopped

2/3 c yellow sunshine tomatoes, halved

3/4 c organic tomato sauce

1 handful fresh spinach, chopped

1 t dried Italian spices (oregano, basil, parsley)

1 t roasted minced garlic (such as this)

fresh basil

Note:  Feel free to use any vegetables you have to top your pizza.

Preheat your oven to 425 degrees.  Place unwrapped corn meal crust directly on the rack, and bake for 15 minutes.

Meanwhile, in a small sauce pan, cook the tomato sauce, chopped spinach, minced garlic, and dried spices until heated.

Removed the crust from the oven, add sauce and any toppings you desire. Bake for an additional 15 minutes, or until the veggies are nice and roasted.  Top with fresh basil and serve.
